    Scott Conant

    After 15 years of cooking some of New York’s favorite Italian cuisine, Scott opened Scarpetta in 2008 to rave reviews and an enthusiastic following that helped establish him as one of the country’s preeminent Italian chefs. Since 2008, Fontainebleau has been fortunate to have Scott dedicate that same passion to the Scarpetta right here. Scarpetta was included in the 2009 “50 Best New U.S. Restaurants” feature in Travel+Leisure magazine. He has since opened other fine dining restaurants and bars across the country. No stay is complete without sampling for yourself his deft touch and unwavering passion to creating food that is unexpected and soulful.

    Robert Basantsov

    Lead Sommelier
    Charismatic and talented wine enthusiast, Robert Basantsov brings his fine dining expertise and distinguished wine education to Fontainebleau Miami Beach as head sommelier at the award winning Scarpetta by Scott Conant. Robert also holds Court of Master Sommeliers and WSET certifications. At Scarpetta, Robert showcases the extensive, international wine knowledge and skills that he has garnered over the years. His combination of high end dining expertise and extensive education make him a well-rounded head sommelier for Fontainebleau Miami Beach’s hot spot.

    Christopher Li

    Chef de Cuisine
    Chef Christopher Li is a Miami native with an undeniable passion for creating inspiring dishes. A former public-school teacher-turned professional cook, Li has always nurtured a love for learning which led him to begin his self-taught career in New York City as a Line Cook at ABC Kitchen by Jean-Georges. Li is committed to applying his culminated knowledge of worldly cuisine to the beloved Italian eatery. He is fortunate to have been mentored by the best and his attention to teaching and learning is a core value that has carried him through this profession.
