Chef Mina has produced a sophisticated bistro-style menu with flavors to complement the high-energy rhythm of Miami. He balances bold, global flavors into the four core elements of his cuisine: spice, richness, acidity and sweetness. The dining experience will be punctuated with signature services such as local shellfish tastings & steaks either dry-aged or smoked tableside. Seafood selections will be driven by the Fontainebleau private fishing vessel, which will bring a daily catch of the freshest local seafood available.
